For the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Directions

To prepare the Cordial: Put all the ingredients into a saucepan, bring to a simmer, agitating so the sugar melts. Next, take off the heat allowing it to reach room temperature completely. Decant into an sealable bottle, seal keeping it in the fridge, it can be stored for around a month.

For the Cocktail Base: Mix the specified liquid ingredients in a large bottle, allow it to infuse for an hour, then strain best through a fine cloth, making it fully clarified.

For serving: Measure 85ml of your premix into your cocktail shaker containing ice, and stir lightly for a minute until cold. Pour into an chilled martini glass or a similar vessel, decorate with a few cranberries adding the final touch using a light spray of the essential oil over the drink.
